Tender coconut kheer or elaneer payasam is one ultimate kheer you should try, especially this festive season.
Very simple to make yet the most tastiest and healthiest kheer you would ever have tasted.
This is one recipe which has been my all time favorite especially if there were sudden guests arriving. It takes less than 10 minutes to prepare elaneer payasam, yet tates out of the world.
Elaneer Payasam – Ingredients
1 Tender Coconut Water – You will be using both pulp and water.
Sweetened Condensed Milk – 50 ml
Milk or milk powder – 1 cup / 200ml
Elachi – 1
Saffron strands – 3
Ghee – 1/4 tsp
Cashews and Raisins to garnish
How to Prepare
Grind the Tender Coconut Water along with Pulp. Need not grind smoothly, as bits of coconut pulp enhances the taste
Mix the Condensed milk with the Chilled Milk.
Mix the Grinded Pulp with Tender coconut water to the Chilled Milk + Condensed Milk.
Heat a small pan, add 1/4 tsp ghee, roast the cashews and raisins and add.
Add Crushed cardamom pods and Saffron strands.
Refrigerate and serve chilled
I keep aside some pulp to add while serving this makes it even more interesting.
